Traditionally for a family meal and a smaller group of people, 2 or 3 dishes can be considered a baseline, and would consist of a soup, a stir fried dish plus a salad. For a larger group, a bigger collection of dishes is known as polite. A great rule of thumb is to offer one dish per guest, or double parts of a reduced collection of dishes. Within the north, etiquette generally dictates that larger servings of 3 or 4 different dishes must be offered, whereas from the south, smaller areas of a bigger amount of dishes is the norm, naturally with rice or rice noodles offering the heart associated with a meal. Like a guest, it's polite to consider one serving of each one dish (about one tablespoon at a time) also to sample each dish before using a second or third serving the exact same dish. It can be impolite to refuse offerings of third as well as fourth helpings. In this way, every person sharing the feast not just enjoys a nutritionally balanced meal, but one that is certainly also eye appealing also.
